    • Cold Settled with Lallezyme C-Max enzyme

    Fermentation

  • Vessel: Stainless Steel

  • Temp:  approx. 63 degrees

  • Time: approx. 3 weeks

  • Yeast:  Alchemy I (Anchor Oenology)

  • Yeast Nutrients:  Go Ferm/Fermaid

  • Aging:   Held for nine months “on the lees”
